Chimichurri Wagyu Sirloin Steak
This chimichurri sirloin steak dish will soon become a family favorite — and is completely versatile! We’ve served our sirloin steak with asparagus, gold potatoes and cut corn on the cob. Also wonderful as an entree salad with arugula or greens and seasonal vegetables, and use the chimichurri as a dressing.
INGREDIENTS
1 lb American Wagyu Sirloin Steak
1 lb gold potatoes, tossed in olive oil, salt and pepper
1 lb asparagus, trimmed + tossed in olive oil, salt and pepper
2 corn on the cobs
CHIMICHURRI DRESSING
1 c fresh parsley, chopped
1/4 c fresh cilantro, chopped
3 tbsp red wine vinegar
1 garlic clove, minced
1/3 c olive oil
1/2 tsp salt
1/4 tsp red pepper flakes
INSTRUCTIONS
Roast or grill corn on the cob, potatoes and asparagus to desired doneness.
Grill or cast iron sirloin steak to desired doneness. Let rest for at least 10 minutes. Top with chimichurri dressing.
