Thai Beef and Basil

Make weeknight dinners fun with this Thai-inspired American Wagyu beef recipe.

INGREDIENTS

3 tablespoons sweet soy sauce
2 tablespoons oyster sauce
2 tablespoons fish sauce
1 tablespoons chili paste in soybean oil
1 tablespoon sriracha
1 tablespoons vegetable or canola oil
2 farm fresh eggs, we used Brigham Family from Whiting
1/4 teaspoon white pepper
2 cloves garlic, minced
1 to 3 serrano or Thai chiles, thinly sliced
1 medium onion, sliced
1 large bell pepper, sliced
1 cup Thai Basil leaves, picked off the stem (regular basil is good, too)
Lime wedges, for serving
Cooked rice, for serving

DIRECTIONS

  1. Combine the first five ingredients in a small bowl and set aside.

  2. Add the oil to a wok or large skillet and heat over medium high heat until the oil is almost smoking.

  3. Add the garlic and chilis and fry for a few seconds before adding the ground beef. Sprinkle the white pepper over the beef and cook almost through, stirring occasionally and breaking up any large pieces.

  4. Mix in the bell pepper and onion and stir fry until they begin to soften, about 2 minutes.

  5. Stir in the reserved sauce, then push everything to the side of the pan. Crack 2 eggs into the middle and scramble.

  6. Add the basil stir once more, then serve over rice with a squeeze of fresh lime.
