Cozy Goulash with American Wagyu
American Goulash is an easy and nostalgic comforting meal that is perfect for the cold winter months.
INGREDIENTS
1 lb. ground beef
1/2 yellow onion diced
1 color of choice bell pepper diced
1-2 medium sized carrots chopped, half-moons
1 TB chili powder
1.5 tsp cumin
1 tsp salt
1 tsp pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp oregano
1/4 tsp cayenne optional
15 oz can of diced tomatoes not drained, Italian or fire-roasted work great!
3/4 cup frozen corn optional
3/4 cup frozen peas optional
1/4 cup ketchup
8 oz short pasta of choice cooked separately to box instructions
CHEESE SAUCE (easy to double)
1 TB butter
1 TB flour
1/2 cup milk
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/2 tsp mustard powder optional
DIRECTIONS
Heat a large skillet over a medium flame for 1-2 minutes. Add the ground beef cook for 3-5 minutes, then add the onion, pepper and carrots, cook for another 3 minutes until softened and the beef is completely browned. Drain any excess grease, if desired. Now add the chili powder, cumin, salt, pepper, garlic powder, onion powder, oregano and cayenne.
Add the diced tomatoes (the whole can), ketchup and frozen veggies if using. Let the mixture simmer on low for 10-15 minutes.
Cook the pasta as directed, drain and set aside.
Make the cheese sauce. Melt the butter in saucepan. Add the butter and stir until combined. Slowly add the milk and stir to thicken. Add the cheese and stir until melted. Add mustard powder if using and salt and pepper to taste.
Add the cooked pasta and cheese sauce to the meat mixture. Mix well until fully combined. Serve + enjoy!
