Perfect Roast Beef
This roasting technique leads to a perfectly cooked, medium-rare to medium roast. In this picture, we’ve made roast beef sandwiches with horseradish sauce, tomato, red onion, greens on toasted bread.
INGREDIENTS
Roast of any size
salt
pepper
herbs (optional)
garlic (optional)
INSTRUCTIONS
Place roast in roasting pan. Season with choice of ingredients.
Place roast in a COLD oven, set the temperature to 425. When the oven reaches temperature, set a timer for 10 minutes. After 10 minutes, turn off the oven and leave the roast in the oven for 2-3 hours. DO NOT OPEN THE OVEN DOOR.
About 90 minutes before serving, set the oven to 350 and roast for 1 hours.
Remove roast from the oven and let rest for at least 10 minutes.
Slice and serve with pan juices, gravy or other favorite way.
