Perfect Roast Beef

This roasting technique leads to a perfectly cooked, medium-rare to medium roast. In this picture, we’ve made roast beef sandwiches with horseradish sauce, tomato, red onion, greens on toasted bread.

INGREDIENTS

  • Roast of any size

  • salt

  • pepper

  • herbs (optional)

  • garlic (optional)

INSTRUCTIONS

  • Place roast in roasting pan. Season with choice of ingredients.

  • Place roast in a COLD oven, set the temperature to 425. When the oven reaches temperature, set a timer for 10 minutes. After 10 minutes, turn off the oven and leave the roast in the oven for 2-3 hours. DO NOT OPEN THE OVEN DOOR.

  • About 90 minutes before serving, set the oven to 350 and roast for 1 hours.

  • Remove roast from the oven and let rest for at least 10 minutes.

  • Slice and serve with pan juices, gravy or other favorite way.
